Lentil Chili for the Recipe Contest

 


1 pound lean ground turkey
1 medium onion, chopped
1 (49.5 fluid ounce) can reduced-sodium chicken broth
2 cups lentils, rinsed
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, undrained
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon pepper
(I added 1/2 tsp salt too)

Just brown the turkey with the onions and add the rest of the ingredients. Bring to a boil then simmer on the stove for about a half hour or so, or until lentils are tender. We had this with sour cream, shredded cheese and tortilla chips. It is not a very strong chili, so those who like more kick might want to power it up with extra chili powder and tabasco sauce. Very simple and hearty though. I did freeze some to see how it would hold up after thawing, and it turned out great.
